Sepia Bitter is a contemporary aperitif – an homage to the French-style bitters of bygone years.
With a base of roasted French chicory, which provides a full-bodied and lightly bitter canvas – Sardinian myrtle (tannic and spicy), fresh seasonal oranges (smooth and aromatic), angelica root (earthy
and bright) as well as a handful
of other botanicals are painted together to create an intricately modern, bitter-sweet spirit.
The result is a tension between the earthy – roasted flavours of chicory and myrtle and the ethereal brightness of orange.
Sip Sepia over ice, in a light beer as is the tradition method in France, or in cocktails.
Bergamot Gin Liqueur

Bergamot takes the lead in this delicately layered, limited edition gin liqueur from the team at Audemus Spirits.
A delicate juniper base is blended with the fresh Calabrian bergamot and a touch of lemon for added zestiness. The journey is rounded off with a touch of Armagnac eau-de-vie that gives the spirit added warmth and body.
It’s a bright, flavour-filled gin liqueur that mixes brilliantly with floral or citrus tonic waters to create a ‘spritz’ style long, refreshing drink. Used in place of vermouth it delivers an incredible martini, but it is equally at home with an ice cube, savoured neat.
On the QT

Every so often Waitrose Cellar runs an ‘On the QT’ series with an alcohol supplier; a limited run of a unique product which is never to be repeated again. In the past, this has been limited to wines – but for Bin 16; for the first time, Audemus was given the opportunity to make an ‘On the QT’ gin!
Following the spirit of the series, we decided to make a wine-based gin!
Advised by the sommelier extraordinaire in Cognac, Olivier Chapuzet, we encountered the devoted biodynamic winemaker in the Bordeaux Entre-Deux-Mers, Mickaël Jaumain. We’re very QT as to how it’s made – but the resulting gin is a boldly juniper-lead gin with warm spiced berry backnote.
Old Ma's Batch No. II

The second batch of Old Ma’s is a special, limited edition of Pink Pepper Gin that has rested in a vintage port barrel for 22 months. The spirit has matured and evolved, melting the rich, tannic port that resides deep in the pores of the oak grain with the spicy complexity of the gin.
Undiluted and unfiltered – decanted from the barrel to the bottle – Old Ma’s is beyond the definition of Gin. A vibrant and intense spirit that can be enjoyed straight, over ice, or in a cocktail.

Dive Bar Gin was born from an emotion. A context. A slow motion feeling of winding down the stairs into a warm and welcoming bar from a different era, tinted with smoke and jazz.
The emotion is captured in the spirit – big Juniper notes are accompanied by the delicate smokiness of Lapsang Souchong Tea, then enriched with the bite of Cubeb and two secret botanicals, sourced for their sultry, aromatic flare.
The limited edition vessel is hand-crafted for Audemus Spirits by the ceramicist Reiko Kaneko, melts together the centuries old technique of creating bone china with contemporary design; creating a unique and intricately minimalist work of art.
Sip Dive Bar Gin in a bitter Negroni, enjoy it fresh as a gin and tonic, or swim in it neat or over ice.
OLD MA's batch No. I

Each batch of Pink Pepper Gin is dedicated to family and friends of Audemus Spirits. Number 6 was in honour of its creator’s mother, ‘Maaa’.
Behind each spirit we produce there is a desire to experiment and create something unique. With this in mind, we reserved 200 litres of the original batch, set it to rest in an old Port Barrel from the Douro Valley in Portugal, and ‘Old Ma’s’ was born. The five-month maturation process has introduced a tannic dryness to the gin, which has infused with the lingering flavour of the original port wine. Oxidisation in the barrel has enhanced the spiciness and strength of character already present in the spirit.
A truly original gin, enjoy sipping it straight over ice, with a dash of triple sec orange liqueur, or in other delicate gin cocktails.
HOPPY Batch No. 1

In collaboration with the Parisian boutique brewery, Deck&Donohue, we have created this bright and fresh gin using an IPA as the base botanical, layering Columbus hops, juniper and angelica to add complexity.
The end result is a light, refined and smooth gin with citrusy, hoppy notes; perfect for dry martinis and other delicate gin cocktails. We suggest serving with a sprig of lemongrass!
