Inspired by the Korean and Japanese soju and shochu, it’s a delicate and lightly floral spirit created with a base of distilled, biodynamic Gewurztraminer wine and a dash of Calabrian bergamot. It is not designed to have aromatic length, which would overpower the flavours and texture of the food. Rather, when chilled and sipped from little cups or glasses, Fractal 3 will act as a palate cleanser, coating the mouth with a subtle flavour and freshness, which quickly dissipates in readiness for the next bite.
The idea for the latest iteration of our Fractal range was born from a discussion between Miko and our friend and frequent collaborator, Reiko Kaneko. After wandering through the Royal Academy of Arts together a few years ago, Reiko & Miko discussed the desire to work together on something artistic. Without the slightest idea of what would come of it – Reiko mentioned that the combination of gewurztraminer and citrus (initial thoughts were to use yuzu, but due to seasonality, this became bergamot) were something that sung to her. It took many years for the idea to bloom into a fully-formed Fractal.
The traditional spirits which inspired this creation are often made from sweet potato, barley or rice and served at between 18 and 35% ABV. Fractal 3.0 is an interpretation of this form of spirit through a European lens.
Although it is primarily designed to be sipped neat and enjoyed alongside a meal, the spirit can also be mixed with a light tonic, or provide the base for low ABV cocktails. Always serve chilled.
